Cutter Recommendations: For a plain border use bench scraper 10000 which has a sharp edge. Press straight down, guillotine-style. For a fluted edge, use either of our zig-zag cutters from Italy (10003 or 10004). They both give sharp patterns. Hold the handle vertically when you roll the cutter. This will give you a guillotine cut, and avoids pushing the dough forward.
Dough Thickness: 5-8mm using our Dough Guides 10009.
